I reallyyyy don’t get “if I’m not immediately good at it I will just quit” people. I mean I do but I don’t. There’s no way to say this without sounding braggy but I have a bunch of creative hobbies and people genuinely say stuff like “How are you so good at everything” (because they haven’t seen me try to play video games or solve logic puzzles) and the answer is I Was Dogshit But I Didn’t Let That Stop Me. I was talking to a friend the other day who was like “I really want a creative hobby” and I suggested crochet and she was like “No, I tried it once but I sucked at it” and I was like Girl. When you were a baby you sucked at language but now we are having a whole conversation. How do you think any of this works

I missed this reply until now!
This is my recipe, it’s the standard basic recipe you can find on King Arthur and a million other places:
However, sourdough is less about a universal recipe and more about your environment and experience. For example, during ferment, sourdough loves a temperature between 72-78° F. That is when it will ferment to the nice jiggly airy texture in like 4 hours. But unless it’s midsummer or you live in the tropics it’s likely your kitchen is not 75°, it’s probably more like 68°.
That may not seem significant, but it is the difference between ferment taking 4 hours and like 6-8 hours. (See final image.)
You just have to practice and learn to go by your senses, not by whatever the recipe says. Everyone’s kitchen is different. Your starter is a living thing and it’s not the same as mine or anyone else’s.
I’ve made a ton of loaves at this point and I still get a kinda flat one like 1/3 of the time bc I’m still learning. It’s always disappointing bc it’s such a process (though it does become like second nature once you get the method down) but that’s just how it goes.
I highly, highly recommend reading through The Sourdough Journey and watching his videos. Mr. Tom Cucuzza is amazing and provides recipe breakdowns, detailed pdfs of the science behind sourdough, etc. all for free (though you can donate if you want!). He’s a huge nerd who starts every video with “Hello and welcome to the Cleveland International Institute for the Advancement of Sourdough Science and Research. Otherwise known as my kitchen.” I love him.
This is probably longer than you were expecting but I have so enjoyed my own sourdough journey over the past couple years. It’s really rewarding. Also, if you can ever swing it, my friends got me this amazing dutch oven specifically for bread. Game changer.

Pro tip, spread some of him really thin on a sheet of parchment paper, let it dry, crumble and freeze. Then if something bad ever happens you can rehydrate and restore him.
Second tip, starters loooove whole wheat flour (vs white flour) it makes them grow big and strong.
Edit: This is a sourdough loaf I made with my starter whose name is Doughlly Parton.
