impermeable:
spinach sandwiches / pancakes
3 cups (handful) fresh spinach
3 tbsp chia (vegan substitute for eggs)
1/2 cup water
2/3 flour
combine chia seeds with water, set aside. pulse spinach and chia gel in food processor until blended. add flour and pulse until completely blended.
+: you can add a spread of garlic hummus between layers and 1 or 2 eggs -in case of a non-vegan meal- for more fluffiness.
