Who here on Tumblr loves the taste of Cinnamon? Christmas cookies, mulled wine, spiced apple cider, and many of the holiday treats in Europe, North America, and Latin America feature cinnamon.
Cinnamon is produced from the bark of trees in the genus Cinnamomum. These cinnamon producing species naturally grow in South Asia, Southeast Asia, and China, where cinnamon is favoured for complex savoury dishes.
Not all cinnamon is created equal though... There are at least 5 cinnamon tree species commercially grown for cinnamon production and the 2 species commonly used in the western world are Cinnamomum verum (True Cinnamon or Ceylon Cinnamon) and Cinnamomum cassia (Cassia Cinnamon or Chinese Cinnamon). The richly flavoured Cassia cinnamon is cheaper to produce and more commonly sold in the Americas, while the more delicately flavoured Ceylon cinnamon is a more popular in Europe. You can tell the difference between the 2 species by looking at the rolled bark "quills". Ceylon is lighter coloured and is many thin layers while Cassia is darker brown and composed of 1 thick layer. All cinnamons have high antioxidants, anti inflammatory, antibacterial and fungal properties, and can lower blood sugar. However, Cassia has high concentrations of coumarin. Coumarin is an anticoagulant chemically similar to the medication Warfarin and pest control poisons. Excessive Cassia consumption can lead to liver damage.
To produce many tree trunks to strip bark from, Cinnamon trees are "coppiced". This is where the tree is regularly cut back to a stump, forcing the tree to regrow many skinny shoots which are harvested for bark. A Cinnamomum verum tree is shown in photo 3 and photo 4 depicts a person harvesting bark from a Cinnamomum cassia.
