“Eat food from farmers markets. Drink good tea each morning. Read books that make you feel. Paint, even if you’re awful. Write, even when you have nothing to say. Sit in the fresh air outside. Go on hikes. Swim in lakes and wade in streams. Sleep as long as you need. Work hard at what you love. Work hard at what you hate. Love unconditionally and wholeheartedly.”

Sausage and Apple Stuffed Acorn Squash with Sage
Ingredients:
• 2 medium acorn squashes, halved and seeded
• 1 tablespoon olive oil
• Salt and pepper to taste
• 1 pound Italian sausage (remove casings if using links)
• 1 large apple, diced
• 1 small onion, finely chopped
• 2 cloves garlic, minced
• 1 tablespoon fresh sage, finely chopped (or 1 teaspoon dried sage)
• 1/2 cup bread crumbs
• 1/4 cup grated Parmesan cheese
• Fresh parsley, chopped (for garnish)
Instructions:
1. Prepare the Squash:
• Preheat your oven to 400°F (200°C).
• Brush the cut sides of the acorn squash halves with olive oil and season with salt and pepper.
• Place the squash halves cut side down on a baking sheet lined with parchment paper.
• Roast in the oven for about 30-40 minutes or until the flesh is tender and easily pierced with a fork. Remove from the oven and set aside.
2. Prepare the Filling:
• While the squash is roasting, heat a large skillet over medium-high heat.
• Add the sausage to the skillet and cook, breaking it up with a spoon, until browned and cooked through, about 7-8 minutes.
• Add the diced apple, chopped onion, and minced garlic to the skillet with the sausage. Cook, stirring occasionally, until the apples are tender and the onions are translucent, about 5 minutes.
• Stir in the fresh sage and cook for another minute.
• Remove the skillet from the heat and stir in the bread crumbs and grated Parmesan cheese. Mix well to combine.
3. Stuff the Squash:
• Turn the roasted squash halves cut side up and spoon the sausage and apple mixture into each half, packing it in tightly.
4. Bake the Stuffed Squash:
• Return the stuffed squash halves to the oven and bake for an additional 10-15 minutes, until the tops are golden and crispy.
5. Serve:
• Remove from the oven and let cool for a few minutes.
• Garnish with chopped fresh parsley before serving.

What is your daily intention? Why is it important?
Mine is to work on compassion today.
It is important because I need compassion and so does everyone else!
Remember that daily intentions shouldn’t be rules for yourself but a commitment. <3
