I have a vegetable fetish
Nothing gets me going more than knowing that there are lots of different veggies in a dish or that a dish is made with a vegetable as its base. It just makes me so happy😙
Today I used stinging nettles to make risotto🌱
I picked them from our garden and stung the shit out my hands✋🏻🤕
But hey, what wouldn’t I do for a nutritious vegetable?🤷🏻♀️
Benefits of nettles
• Vitamin A
• Vitamin C
• Magnesium
• Iron
• Vitamin K (never heard of)
• Reduces inflammation
• Reduces hay fever symptoms
• Contains potassium
• and Zinc
• Calcium
In conclusion EAT YOUR VEGETABLES, kids.

Just demolished half of this salad🥗💪🏻
Mannnn there’s just something about volume eating vegetables. You guys already know that I’m a vegetable junkie. 🥕
The salad has:
• a mixture of beans🫘 - protein, fiber & and bunch of vitamin B variations.
• carrots - vitamin A (beta carotene), K1, B6 and potassium
• quinoa - protein, fibers and a tiny bit of omega-3!
• broccoli - vitamin C & K, fiber and iron
• iceberg lettuce - no nutritional value 🤷🏻♀️
